Description
Even beginners can make a delicious Japanese traditional broth, dashi. It contains 2 packs of Katsuobushi (thin shavings of Karebushi) and 1 sheet of natural ma-kombu. With this one package, you can experience an authentic Japanese flavor.

Bonito (Kagoshima prefecture, Japan), Kelp (Hokkaido prefecture, Japan)

How to make Dashi
Dashi stock, made with dried kelp and bonito flakes, is the basis of nearly all Japanese cuisine. Here is the most common way.

  1. Put the dried Kombu in one liter of water and soak overnight (or at least for 2 hours)
  2. On a low to medium setting, heat the water with the Kombu
  3. Remove the Kombu just before the water boils
  4. Bring the water to a boil, then add the 2 packs of Katsuobushi
  5. Boil on medium heat for 5 to 10 minutes. (For a more subtle taste boil for a shorter time. For a stronger taste, boil longer)
  6. Remove the Katsuobushi packs, and a delicious is ready
