Katsuobushi「かつお節」


Katsuobushi is one of the most important base ingredients to enhance umami. It's a dried bonito which is made through an extremely time-consuming process that involves taking freshly caught skipjack tuna, unloading it, boiling it in a large pot for two hours, removing the bones, inserting minced fish paste into the gaps where the bones used to be, drying the fish, slicing the surface into strips, drying it in the sun, and applying mold to help preserve the fish. Katsuobushi only arrives in the hands of consumers after an intensive preparation process involving more than ten steps.
